Vastedda della Valle del Belice - DOP

The Vastedda of Valle del Belice PDO has the typical form of a flat with slightly convex faces.

Vastedda della Valle del Belice DOP, the inique “pasta filata” cheese mmde with sheep milk.

It is made with only raw milk produced by Valley of Belice ewes reared in the valley around the Belice river. Sheep diet is costitued mainly by natural pastures and concentrates OGM free.
The “Vastedda della Valle del Belice” is produced by Sicilian cheese farmers that, helped by the autochthon micro flora, are able to stretch the tuma cheese. During the cheese making process, the traditional and historical equipments are used. The PDO “Vastedda della Valle del Belice” achieved the National Transitory Protection with the DM n. 22573 published in the GURI n. 290 of 14/12/2007. The authority responsible of quality certification is the Istituto Zooprofilattico Sperimentale of Sicily.

The cheese Vastedda of Valle del Belice be consumed fresh, at most after three days from production.

The PDO “Vastedda della Valle del Belice” is protect by the “Consorzio per la tutela del formaggio Vastedda della Valle del Belice” in Agrigento.Today the Consortium has more than 50 associates: milk farmers, cheese farmers, public istitutions. The main aims of the Consortium are the promotion, the protection and the valorisation of the “Vastedda della Valle del Belice” cheese and, successively to the MIPAAF acknowledgement, the surveillance too.
